I was just wondering if the Legato I/V could be configured for other dac chips? I have a single ended Iout dac, delivering +-1mA, with no offset on the output.

Sure, it is very likely possible, but you would need to understand how it works so you can change some values. You would especially need to understand where the DAC output bias voltage needs to stay.
